It is summer time and I have decided to treat myself with some Mediterranean recipes. I love Mediterranean food and the fact that it is my diet has forced me to try a lot of different foods. So far, I have learned about Greek food, Italian food, Spanish dishes and now I am looking into Mediterranean recipes. If you are a lover of Mediterranean food as I am, you will love these recipes. Here are my favorites:
Chicken Meal with Zucchini & Herbs: This dish is actually Mediterranean food in origin. You can eat this along with fish, or just by itself. In this meal, chicken is marinated in yogurt and then cooked with garlic, olive oil, zucchini and herbs. This is perfect for those who don’t like too much meat, but still want to enjoy Mediterranean flair. This meal is served with Spanish rice and dips.
Chicken Feta Salad with Pine nuts and Herbs: This salad is very easy to make. All you need is crushed tomatoes, reduced fat feta cheese, olive oil, chopped fresh pine nuts and sprinkled with herbs. This dish is great on its own, or you can top with your favorite herbs and cheeses.
Fettuccine Alfredo with Manzanita Pasta: This Alfredo sauce recipe is great on its own, or you can top it with pasta if you want to. Basically, you stir in Alfredo sauce, add some Manzanita peels, garlic, some fresh seasonings, and then warm it up. Then, just sprinkle some pasta and sauce over it. Don’t forget to top with tomato, basil, or cheese. This is my favorite Mediterranean food delivery.
Lasagna With Beans, Tomato, And Menudo: This recipe is great if you like to eat a heavy pasta dish. Basically, you cook the pasta and then add your favorite heavy flavor ingredient (beans, or chicken, or shrimp, or etc). Then, just mix it all up, and heat it up. You’ll basically just pile it high with sauce and then cover it up so that it’s not visible. Makes me feel good in my tummy.

Just remember that when it’s delivered, it’s hot. I always suggest having an idea of how much you want to have, and heat your oven first. Otherwise, you might end up with a burnt dinner, which is not what you want.
